Golden straw coloured Chardonnay, with just a gentle touch of oak. The philosophy of Seven Springs is to aim for balance and staying true to the nature of their vineyards. The Overberg has such rich soils that it delivers a unique type of fruit, which does not need much to show its beauty and elegance. The acid is bright and fresh, yet not acidic. The flavours are that of candied lemon, velvety crème Brule with a unique salinity found in the wines from here.
Easily enjoyed on its own, but beautifully paired with canapés, mild cheeses, mild curries, rich fish or poultry dishes and my favourite…pork belly. Serve chilled at 14-16°C
A spicy full bodied red wine, with white pepper undertones. Slight French oak gives this wine a soft tannin structure with smooth mouth feel. Combining dark berry fruit with spicy richness makes this wine a drinking pleasure. Able to age for five years.
A fabulously aromatic Rhône-inspired blend, with bramble fruit, violets and complex smoky-mineral notes. The palate is seamlessly textured and beautifully balanced, with real lift yet no lack of power
This dry, full-bodied white is matured for 12 months in new 300 litre French oak barrels. It is characterised by tangy citrus fruits softened by undertones of vanilla and a nutty complexity. Awarded four stars in the John Platter Wine Guide, this is a big wine for special occasions.
With raspberries and rose petals on the nose and strawberry yoghurt on the palate, there’s a fresh acidity to this wine that lingers long in the mouth.
