Named after a bird of prey that can often be seen catching the thermals high above the Fable farm, the Jackal Bird is a wine that uses the famous South African old vine Chenin Blanc as a foundation and augments it with aromatic and textural Southern Rhône cultivars.
Light to pale straw, inviting complex and intriguing floral aromas with pear and citrus. On the palate crisp minerality and stone fruit as well as a pithy texture and a subtle lingering finish, fresh and elegant with unravelling layers.

This full bodied, rich Chardonnay offers a powerful citrus and steely backbone. Classic toasty and butterscotch-like characters with mineral undertones. Good balance of oak followed with abundant fruit.

This is the signature Cabernet Sauvignon of Neil Ellis. It is a distinctive style with all the hallmarks of the Jonkershoek Valley and known for its distinctive balance of elegance and fruit power. Medium intense ruby red colour. Restraint aroma but deep, complex perfumes of blue and black small berry fruit. Cedary aromas and touches of mint, so typical of a Jonkershoek wine. The palate is smooth and plush followed by fine, but dense tannins. A ripe, soft tannin vintage with savoury undertones.
Red meat, grilled pork or roasted lamb. Game such as springbok, ostrich, rabbit and venison.
The delicious black berry fruit and spice of the Shiraz is tightened up with some herbal and meaty elements of the Mourvèdre bringing more length and complexity to the palate. The ratio of the is 78% Shiraz and 22% Mourvèdre.
Delicious with marinated beef fillet skewers with onion, bell pepper, tomato and mushroom served on saffron rice.
Intense dark cherry character and rich concentrated palate. Fruit balanced by toasty character derived from oak maturation.

Vibrant and zesty with aromas of pear, gooseberry and passion fruit layered with subtle mineral tones. Full flavoured with a rich mid palate and peach and litchi flavours which linger on the finish. All grapes used to make this wine were picked by hand.

97% Sauvignon Blanc, 3% Semillon
This full bodied Sauvignon Blanc based blend offers a variation of fruit characters including ripe gooseberry, green peppers, green melon and hints of tropical fruit.
Prawn risotto, lobster, soft cheeses and sunshine.
Grapes are picked only in the cool, early hours of the morning and processed immediately. The grapes are destemmed and chilled further before they are pressed. This ensures minimal degradation of the fruit aromas.
The free run juice and press juices are kept separate from each other and treated according to their individual character. The wines are cold fermented in small stainless steel tanks and are 100% unwooded. This method locks in freshness and vigour, which elevates the natural aromatics. After fermentation the wines are matured on the yeast lees to promote mouth feel and creaminess, before they are blended, stabilised and bottled.
A pale lime colour with flinty freshness balanced with white fruit and an endearing floral bouquet. Tightly grouped tropical flavours with pear and quince. Full and rich with a fresh, zesty finish.
